Chipotle Lime Aioli

This 5-minute chipotle aioli is smoky, creamy perfection! Made with Greek yogurt for a lighter twist, it balances smoky chipotle heat with bright lime zing. Let it rest 15 minutes for the flavors to develop, then watch it transform everything from tacos to grilled veggies into pure magic!

Ingredients  

  • 1 c. Whole Milk Greek Yogurt Plain
  • 1 clove Garlic finely minced
  • Juice of 1 Lime
  • Zest of 1 Lime
  • 2 tbsp. Adobo Sauce
  • 1 tbsp. Chipotle Peppers in Adobo Sauce finely chopped (omit for less heat)
  • 1 tsp. Sea Salt

Instructions 

Mix the base

  • In a medium bowl, whisk together Greek yogurt, minced garlic, lime juice, and lime zest until smooth.

Add the heat

  • Stir in chipotle adobo sauce and finely chopped pepper (if using).

Season and combine

  • Add salt and whisk until well combined.

Taste and adjust

  • Sample and adjust seasoning as needed.

Let it rest

  • Allow to rest for 15 minutes before serving to let flavors develop.

Serve

  • Enjoy chilled or at room temperature.

Notes

Heat level control.
Start with just the adobo sauce if you're sensitive to spice. The chopped pepper adds serious heat, so taste as you go!
Greek yogurt matters.
Use thick, plain Greek yogurt for the best texture. Regular yogurt will make it too thin and watery.
Make-ahead friendly.
Actually tastes better after sitting overnight! The flavors develop and deepen beautifully.
Consistency fix.
If it gets too thick after chilling, whisk in a teaspoon of lime juice to loosen it up.
Fresh is best.
Use fresh lime juice and zest for the brightest flavor. Bottled lime juice just won't give you the same pop.
Wash your hands!
After cutting the peppers, wash your hands so that you don't transfer the heat on your fingers to your eyes and face. Trust me on this one!
