Instructions

Prep the lime

  • Zest the entire lime using a microplane or fine grater. Cut the lime in half and juice it, removing any seeds.

Combine ingredients

  • In a medium bowl, whisk together the Greek yogurt, lime juice, lime zest, minced garlic, and salt until smooth and well combined.

Taste and adjust

  • Sample and adjust seasoning as needed – add more lime juice for tang, salt for brightness, or a touch more yogurt for creaminess.

Rest and serve

  • Use immediately or refrigerate for 30 minutes to let flavors meld. Serve chilled and enjoy!

Notes

Texture Options
For an ultra-smooth, restaurant-style consistency, use a food processor or blender instead of whisking by hand. The hand-whisked version has a slightly more rustic texture that's equally delicious.
Consistency Control
If you prefer a thinner drizzling consistency for tacos or salads, add lime juice one teaspoon at a time until you reach your desired thickness. For a thicker dip consistency, refrigerate for an hour.
Serving & Storage Hacks
Transfer to a squeeze bottle for easy drizzling over dishes — it keeps beautifully in the fridge and makes meal presentation effortless. Store covered in the refrigerator for up to 1 week. The flavors actually improve after the first day as they meld together. Give it a quick shake or stir before serving if any separation occurs.
